A heavenly dish from Hue
==================================== Bizarrely named it may be, but hell rice is a splash of colors and a mix of some delicious flavors The central town of Hue often provokes people into asking about its cuisine, which not only boasts many exotic delicacies ,but also some weird names. And names do not come any weirder than cơm âm phủ (hell rice). The name causes curiosity, even a feeling of anxiety, among visitors who nevertheless always order for it when they see it on the menu. It is actually a simple dish, made from ingredients like pork, shrimp, egg, and vegetables. There are various stories about the origin of the name. The most vivid is about the rice being served at “Hell Restaurant” in Hue more than 80 years ago. The eatery was situated in a large field and opened only at night. The simple place had just oil lamps to dispel the pitch dark, the wind blew from all sides, causing an eerie, somber atmosphere. Its clientele was mainly workers, prostitutes, and their clients. In the past, hell rice was a simple but tasty dish combining hot rice and ingredients such as braised fish, pickled bean sprout, shrimp, and pork. Am Phu (Hell) Restaurant is now located at 35 Nguyen Thai Hoc Street opposite the stadium in Hue, but is not the apocryphal place with bamboo tables and oil lamp. It is a restaurant with electrical bulbs and reasonable tables and chairs. The dish has become more elaborate than in the past. It still has hot rice, but also contains many items that are cut into thin strips to give it an attractive look. Cơm âm phủ requires delicious and fragrant rice made in a rice cooker. To make the rice soft and prevent it from becoming dry, it needs to be soaked in water for two hours before cooking. Next, thin omelets are made from duck eggs without the addition of any condiments, and cut into strips. Some prawns are peeled and pounded with a mortar and pestle after their heads are removed. A pan is heated, some oil added to it, and the prawn paste is put in. The paste is stirred over medium low heat until the shrimp turns color, indicating it is dried and done. Depending on the taste of a customer, one can add other ingredients like pork sausage, barbecued pork, boiled chicken, or lean pork paste, which are cut into thin strips. One can also add vegetables such as cucumber and pickled carrot radish, and scallion heads, again all sliced into thin strips. Cơm âm phủ is eaten with a dipping sauce made by mixing fish sauce with lime, chili, garlic, and sugar. The result is an explosion of colors and flavors. Green tea’s lesser known health benefits

Green tea, one of the oldest beverages known to mankind, is a cooling drink for summer with various medical benefits and also a cure for many external ailments, say local herbalists. Green tea has some surprising medical properties. Our ancients knew them, and modern science is gradually discovering them. Dr Pho Thuan Huong, a herbalist, says green tea, one of the oldest beverages known to mankind, is a cooling drink for summer with various medical benefits. In a story in monthly magazine Suc Khoe & Doi Song (Health and Life), Huong says green tea cools the body, strengthens blood vessels, discharges toxins, cures rheumatism and scurvy, heals injuries, and is a diuretic. The doctor lists several remedies offered by green tea. To improve bladder operation and regulate menstruation, boil green tea leaves with motherwort seeds for 20 minutes, and drink the water hot twice a day. Appetite loss and indigestion can be cured with porridge made using green tea decoction. The remedy is popular in Japan. For diarrhea, boil green tea leaves with lotus leaves and drink it hot. In case of cough and fever, respiratory inflammation, people should drink water boiled with green tea and honeysuckle two to three times a day. Liver and acute gall bladder inflammation, nosebleed, and blood in the urine and stools can be cured with tea and tulip water. Green tea cooked with ripe mango prevents vomiting. But green tea is to be avoided in case of stomach inflammation, sleep loss, constipation, and high fever. Pregnant women and young children too should not use it. A research report published by the US-based Western University of Health last December listed various benefits of green tea, including reducing bad cholesterol. The conclusion, drawn from tests of 1,415 people, said this was due to the catechin in the leaves. The tea was not found to have any effect on good cholesterol. Herbalist Vu Quoc Trung, a member of the Vietnam Association of Traditional Medicine, says green tea decoction is also a cure for many external ailments. Firstly, it is a good skin cleanser. It removes dead skin cells, producing soft and bright skin and preventing acne. But since it makes the skin dry, it should only be used once or twice a week. There are different ways in which it helps in case of skin damage. For bee stings crush the leaves or soak them in boiling water and apply on the bitten area. For skin inflammation due to too much contact with water, which often occurs to farmers and others in the countryside, boil some old green tea leaves with alum, wait until the water cools, and rub it on the affected areas. Green tea decoction, once it cools, can also be used for slight burns to reduce pain, prevent swelling, and heal it faster. Rashes and pimples can be cured by direct contact with crushed leaves or regular rinsing with tea water. To treat cracked skin, chew or crush the leaves to put on the chaps, and bandage it with a piece of cloth at night. For sunburns, rub the affected areas with tea water, dry them, and rub with vinegar. Tea water also stimulates hair growth thanks to its antioxidant epigallocatechin gallate, according to a 2007 study conducted by the Seoul National University College of Medicine. People can soak the comb in tea water, which is left through one night, and brush the hair. Taking care of the kidneys
======================================= A diet with less protein and salt keeps the kidneys healthy and functioning, a doctor says. Dr. Ta Thi Tuyet Mai, head of the Nutrition Department at Gia Dinh People’s Hospital, a popular medical facility in Ho Chi Minh City, tells Saigon Tiep Thi newspaper that proper nutrition is enough to ensure strong kidneys. More than 70 percent of kidney failure cases are due to high blood pressure and/or diabetes. People should thus avoid habits that enable the conditions, like smoking, drinking, insufficient exercise, and diets over loaded with salt and fat. The purpose is to reduce the work load on the kidneys, whose main tasks are to remove waste, especially urea, filter the blood, and regulate blood pressure. Overworking the kidneys damages them. “Normally, a diet without too much protein – around one gram per kilogram of body weight per day – and a moderate amount of salt – 3-5 grams a day – is good for your kidneys,” Mai says. She suggests several kinds of foods with moderate protein content, including dishes made from cassava, like miến, a kind of vermicelli, tapioca and water chestnuts. Consuming these foods three or four times a week “will help reduce 20-30 percent of the workload on your kidneys.” For people who prefer having rice in their meals, the doctor recommends having rice cooked with miến in a proportion of 2:1. “Each bowl of rice with miến has 1.8 grams of protein less than otherwise,” the doctor says. People should never starve or eat too much, and those with diabetes or high blood pressure have to follow a strict diet recommended by doctors. The diet becomes a tricky issue when someone already has already suffered kidney failure. A damaged kidney causes loss of appetite and energy, forcing the body to use the energy from muscles, and that increases urea production, which means more work for the kidneys. Kidney patients have to consume foods high in calories but less with protein by having more fried dishes instead of boiled or stewed ones. They should also reduce sodium, potassium, and phosphorus from roots and vegetables by cutting them into smaller pieces, boiling them with a lot of water, or soaking them in water for a while before cooking. People should consult their doctors about any medication they take for possible damage it can cause to their kidneys. They should take every opportunity to exercise – by walking instead of riding, using the stairs, or attending dance classes. People should have regular health checks, including microalbumin urine test to detect the presence of albumin, an early sign of kidney failure, Mai says. Otherwise, they will only notice the condition through symptoms like increased urination, anemia, high blood pressure, exhaustion, and appetite loss, but by then the kidneys will be functioning at less than 10 percent of their normal capacity. A tribute to Vietnamese women
============================================== Cuong Ngo’s “Ngoc Vien Dong” (Oriental Pearls), a collection of seven unrelated short films, each about the life of various fictional women, will be released in Vietnam on International Women’s Day, March 8. The 120-minute film won the best cinematography and music prizes at the California Independent Film Festival last month. All seven films have titles beginning with the letter “T” - Thuc (Awake), Thoi gian (Time), Tho (Poem), Thuc va mong (The Real and Dream), Thuyen (Boat), Trang huyet (Bloody moon), and Tang pham (Gift). They were adapted from award-winning short stories by writer and stage director Nguyen Thi Minh Ngoc about the lives and love of the seven women who are of different ages and live in different circumstances. Ngoc herself plays the protagonist in one of the films. The shorts also star famous actresses like Nhu Quynh, Hong Anh, Truong Ngoc Anh, and Ngo Thanh Van. Cuong Ngo, who studied cinematography in Canada for five years and has been living there, said he was very lucky that these actresses agreed to act for free. In 2009 Ngo shot to fame with another short film, “The Golden Pin,” about a swimmer who struggles between his true gender identity and his family’s expectations. It won the Best Canadian Short prize at the Toronto Inside Out and Video Festival, and second prize in the 2009 National Film Board Best Canadian Short Award. Ngo said “Oriental Pearls,” his “gift” to Vietnamese women, was born out of his appreciation for them. “Vietnamese women can enchant any man with their inner beauty, which is too complicated and mysterious to be discovered” he said. He made “Oriental Pearls” in 2010. After being released in Vietnam, it will be entered in the Amerasia Film Festival in Montreal, Canada, in mid-March. By Hien Nhi, Thanh Nien News
